This man comes into my job almost every day with a free frosty coupon. He’s homeless, and he’s also of the nicest homeless people that come here. He just made me want to hug him when I saw him mixing ice in what was left of his frosty, just to have a bit more. Smh, I’m giving him another free one. This is saddening me, seriously. I went up to him and offered him one, he smiled and said “naahh” I said you sure? Is there anything I can help you with? He laughed and shook his head in a polite way. One of the most humble people to come through here… Every other one is usually rude, and angry. But this man still keeps his joy. This tells me I should never have a reason to frown, if he can still manage to smile.

this seriously made me tear up as i read it… i always try to help out the homeless but you cant help them all….  saddening… the world we live in.

Recipe of the Day: Cinnamon Roll Pancakes
Filling:

  • 1 stick butter, softened
  • 1 cup packed brown sugar
  • 2 tbsp cinnamon
  • 1/2 tsp nutmeg

Pancakes:

  • 1 1/2 cups all purpose flour
  • 1 1/2 cup whole wheat flour
  • 1 1/2 tsp salt
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 2 1/2 cups milk
  • 2 eggs

Begin by making the cinnamon filling. Use a mixer to beat the butter until fluffy. Add brown sugar, cinnamon and nutmeg and beat until smooth. Using a rubber spatula, transfer the filling into a pastry bag, or a resealable plastic bag that you’ve snipped a small piece of the corner off of.

It makes easy clean up to use the same bowl to mix the pancake batter. Mix flours, salt, sugar and baking powder. Add milk and eggs and stir until combined. Spoon batter onto a warm, greased griddle or large skillet. Make a swirl of the cinnamon filling on each pancake. 
Flip when the edges begin to dry, cooking evenly on both sides. (The filling might ooze off the pancakes a little after you’ve flipped them. It’s okay.)
